Resumen

Alimentary globalization is giving rise to a transformation of local
practices and associated representations. In the face of this process,
social actors produce ellaborate strategies of agreement or rejection.
This analysis was carried out in places of social relevance such as
distribution places which reproduce the diversity of alimentary
products and habits; meat is a product of great symbolism.
